Hula Sliders

Hula sliders from last night. A spontaneous supper that happened to be delicious. Since it was just the two of us we were able to use extra ground beef we had left over after making spaghetti a few nights ago. Below is a general summery of how we put it together. Sorry there is only the one picture. I didn't think about taking more pictures to post until after the meal was already finished.

Ingredients:

  • 1/2 pound lean ground beef
  • 3 slices pineapple (don't discard the juice; you will need a slosh of it)
  • 1 slice pepper jack cheese
  • 4 Hawaiian rolls 
  • 1 1/2 tablespoon mayonnaise 
Directions:

  1. Take 1 slice of pineapple and cut into small chunks, crushing slightly.
  2. Mix prepared pineapple with ground beef
  3. Form beef and pineapple mixture into 4 patties. 
  4. Grill patties to desired doneness; they will cook faster than full-sized burgers. 
  5. As soon as you remove the burgers from the grill, place a quarter slice of pepper jack cheese on top and allow to melt. 
  6. While cheese is melting, grill 2 slices of of pineapple. This will take less than a minute. 
  7. Cut pineapple slices in half and place on top of patties. 
  8. Mix mayonnaise and about a half teaspoon of pineapple juice until well blended; spread on halved roll.
  9. Add patty and pineapple to form whole slider. 
  10. Enjoy! They are delicious.
