Wow, it's been over a year that we have been living on our own and it has been quite the roller coaster of life. Let's see if we can share more recipes and crafts this year. :) As the first post in a long time, how about some Pizza Pasta Cupcakes? I was talking to my mom on the phone yesterday trying to come up with ways that she could jazz up leftover spaghetti she has in her fridge, and thought of an idea I had saw on pinterest of spaghetti cupcakes which got me thinking. I was already planning on making a pizza pasta casserole for supper last night. Then it hit me: why not bake the pizza casserole in a cupcake tin instead of in a casserole dish? Genius right?Well this is how it worked out:
Ingredients:
1/2 bag egg noodles
1/2 can spaghetti sauce
1 roll of sausage
1 cup shredded pizza blend cheese
1/2 bag pepperoni slices
Directions:
1. cook egg noodles according to package directions
2. pour noodles in a colander to drain.
3. Leave noodles in colander while you prepare sauce. Preheat oven to 350 degrees.
4. brown sausage in pan.
5. add sauce let simmer to marry flavors together.
6. add noodles to pot and stir together
7. stir in about half the pepperonis
8. scoop mixture into muffin tins
9. top with cheese and a pepperoni
10. bake for 10-12 minutes or until golden on top.
I also froze one pan still in the pan and saved them in ziploc bags for the roommate to take for lunch.

Hula Sliders
Hula sliders from last night. A spontaneous supper that happened to be delicious. Since it was just the two of us we were able to use extra ground beef we had left over after making spaghetti a few nights ago. Below is a general summery of how we put it together. Sorry there is only the one picture. I didn't think about taking more pictures to post until after the meal was already finished.
Ingredients:

- 1/2 pound lean ground beef
- 3 slices pineapple (don't discard the juice; you will need a slosh of it)
- 1 slice pepper jack cheese
- 4 Hawaiian rolls
- 1 1/2 tablespoon mayonnaise
- Take 1 slice of pineapple and cut into small chunks, crushing slightly.
- Mix prepared pineapple with ground beef
- Form beef and pineapple mixture into 4 patties.
- Grill patties to desired doneness; they will cook faster than full-sized burgers.
- As soon as you remove the burgers from the grill, place a quarter slice of pepper jack cheese on top and allow to melt.
- While cheese is melting, grill 2 slices of of pineapple. This will take less than a minute.
- Cut pineapple slices in half and place on top of patties.
- Mix mayonnaise and about a half teaspoon of pineapple juice until well blended; spread on halved roll.
- Add patty and pineapple to form whole slider.
- Enjoy! They are delicious.
